FROM THE EARTH TO THE BOTTLE

Vineyards at altitude

The 13.5 hectares of vineyards are located between 350 and 650 meters above sea level. They are laid out in a mosaic of fifteen parcels planted on the Estate’s best terroirs. On these soils of schists and sandstone (rocks), the Sangiovese and Syrah grapes find ideal pedoclimatic conditions to express themselves in all their complexity. The altitude and wide range of temperatures allow slow and balanced maturation. Canaiolo, as well as Trebbiano, Malvasia, Moscato and Viognier are grown in smaller proportions. The high planting density (from 5500 to 7000 vines/ha) allows the roots to explore deeper soil layers, producing rich grapes, a direct expression of the terroir.

Vinification

The grapes are harvested entirely by hand, in several stages, to harvest only the grapes that have reached optimal maturity. In the cellar, the grapes undergo a second selection to ensure impeccable sanitary conditions, fundamental to producing quality wines. Fermentation takes place spontaneously by the yeasts and bacteria naturally present on the grapes. The wines obtained are aged in large oak casks, concrete vats, stainless steel tanks, barrels, or in stoneware jars to fully express their potential. The lunar cycles mark the racking and bottling dates.

Le Vin Santo

The grapes are selected and harvested during the month of September. The grapes are then dried in the “vinsantaia” for about 4 months. The juice, obtained by pressing the grapes, is placed in caratelli, small wooden barrels of various origins (oak, cherry, mulberry, acacia ..). Fermentation takes place naturally and lasts more than 10 years. During the aging process, the “angel’s share” (evaporation loss) represents about 40% of the initial content, with a final vinsanto yield of 10-15% of the grapes’ initial weight. Over the years, this nectar develops a beautiful amber color and complex aromas of dried fruits, pastries and honey. It is a rare wine. Our production does not exceed 400 liters in the vintages in which it is made
