Winemaking

Hand Harvest in the first weeks of October. Destemming and whole berries maceration. Spontaneous fermentation with pied de cuve in stainless steel. Extraction is done through pumpovers and punch downs. Total time of maceration 30 days. Spontaneous Malolactic Fermentation in stainless steel tanks.

Selected grapes from the best galestro soils (schist)
Average altitude : 550 m asl
Plantation density: between 5900 and 6250 vines/ha
Average age of the plants : 20 years
Yield 35 hl/ha.
