The new oil is produced with hand harvested olives when they are still green to bring out the herbaceous aromas and spicy taste. It has a great aromatic intensity with aromas of artichoke and mown grass. The dominant flavors are bitter and spicy.

In the heart of Chianti Classico, among the rolling hills of Poggio alla Croce, our estate is born: a place where nature meets tradition and innovation merges with respect for the land.
Our estate extends over 188 hectares, of which 13.5 are dedicated to the production of wines and 20 to the cultivation of olive trees. Each phase, from the vineyard to the bottle, is cared for with passion and attention, to offer products that speak of our territory.

Hand harvesting. Time span between picking and crushing less than 24 hours. Defoliation and washing of olives. Crushing by disk system under controlled atmosphere. Extraction by 3-phase centrifugation.
Mill equipped with the Alfa-Laval® three-phase centrifugal separation system (pomace – water – oil) and crushing tanks equipped with the European Tenuta La Novella patent. Stainless steel storage tank. Plate filter.
Mainly composed of clay shale (70%) but also silty sand and marl. Organic farming, pruning every two years.
