VINEYARD

Vines are trained in guyot and the soil is mainly composed of limestone.
Density Plantation: 5500 vines/ha. Organically farmed since 1996.
VINIFICATION
Manual harvest during the morning coolest hours (usually last week of September). The grapes are handpicked and selected to ensure an accurate degree of maturation and a healthy state.
Gentle pressuring of the full grapes. Only one delicate pressure of 1, 2 bar into a pneumatic press.
Spontaneous fermentation with indigenous yeast into temperature controlled stainless steel vats.
AGEING
The wine ages for 8 months on total lees, about 50% in oak barrles, 50% in ceramic vats. No fining, no filtration.
Ageing in bottle for 4 months.
TASTING
White wine typically tuscan, light yellow with slight golden notes and pale green hints.
The nose reveals a rich bouquet of floral scents along with typical subtle aromatic notes of the moscato.
The structure in the mouth has fine and charming tannic weave. It also reveals slightly spicy notes and leaves a pleasant and persistent aftertaste.
This wine will be the ideal accompaniement for a hard cheese such as pecorino or parmigiano as well as white meats and grilled fishes.
