Vines are trained in guyot and the soil is mainly composed of schist and sand. The plots are organically farmed since 1996.
Certified Biodynamic by Biodyvin.
Manual harvest during the morning coolest hours (usually mid September). The grapes are handpicked and selected to ensure an accurate degree of maturation and a healthy state.
80% of the grapes are directly pressed, whole clusters. 20% of the juice comes from “saignée”.
Spontaneous fermentation with indigenous yeast into temperature controlled stainless steel vats.
The wine ages for 5 months on total yeasts, and 2 months in bottle. No filtration.
Light pink color.
The nose reveals a rich bouquet of red berries, cherry and white peach.
The palate is fresh, with a crispy and salty taste. It also reveals aromatic herbal notes and persistent aftertaste.
This wine will be the ideal pairing for antipasti, seafood, cheese but also as aperitivo.
