Chianti Classico 2009

85 % Sangiovese, 10 % Merlot, 5% Ancelotta
Age of vines: 15 years.
Yield: 35 hl/ha.

Farmed organically since 1996, the 12- hectare vineyard is is composed of a mosaic of vine parcels.
Calcareous and schist soils.
Densely planted (5700 to 6900 vines/ha).

The grapes are handpicked and selected to ensure an accurate degree of maturation and a healthy state.
The grapes are gently separated from the stems and crushed.
The alcoholic fermentation takes place in special istainlessteel vats composed of fullers and bands to ensure a constant temperature control.
The temperature is maintained at 25° – 28°C during the fermentation and maceration of approximately 18 days.
During this period pumping over and breaking down are carried out alternatively.
The pressing is achieved through a pneumatic press.
The free run wine is kept at 22°C (72°F) to support the FML.
After FML the wine is partially transferred into French oak barrels.

8-10 months of ageing in French oak barrels (1, 2, 3 wines used).

His colour is deep and bright ruby.
The smell is expressive and deep in structure, with red fruits hints, incense and mediterranean garrigue.
The mouth is concentrated and offers a beautyful freshness: sweet pepper, black fruits with a big aromatic expression and finessed tannins.
