85% Sangiovese, 10% Cabernet Sauvignon, 5% Merlot.
Age of vines: 12 years.
Yield: 35 hl/ha.
Farmed organically since 1996, the 12-hectare vineyard is composed of a mosaic of vine parcels. Sandstone and schist soil, densely planted (5700 to 6900 vines/ha).
Hand picking, with several selections, in order to harvest only grapes at optimum maturity.
De-stemming, second selection on sorting table.
20 to 30 days of maceraction into vinification vats with very gentle extraction, essentially from punching the cap during the middle of fermentation.
After de-vatting, wines are transferred into barrels for malolactic fermentation.
12 months of ageing in French oak barrels (25% new barrels, 45 % one wine, 30% two wines).
The color is a beautiful deep ruby red.
Expressive nose with aromas of ripe fruit, reveals spicy notes of black pepper and cloves.
Velvety tannins envelop the palate leaving hints of citrus and ripe plums.
It is an intense and persistent wine, that leaves a good taste of raspberries and red currants.
